The last Goodness day

GOODNESS (and gracious!) foodie entrepreneur Elettra Wiedemann.

How's it going at GOODNESS?
We've been devouring this healthy, delicious food, which is not something that happens very often during fashion week.

Where did this idea come from?
I studied at the London School of Economics, and my dissertation was about the future of feeding the urban population. I finished that last year, and I had to take a time-out because my brain was on fire after the exams. So I decided to go for it!

Tell us about the chefs!
We've featured Chris Rendell of Whitehall, Rob Newton of Seersucker, and Nick Wilber of The Fat Radish. The menu is a combo of GOODNESS with a touch of BADNESS.

Are you full of more GOODNESS or BADNESS?
I want to be mostly GOODNESS, but I think I've been BADNESS. Ha! I ate healthily this week, but still ate too much of everything!

All the fashionettes have been popping by?
Prabal Gurung, Steven Kolb, June Ambrose, Laura Brown...

So many people to entertain! Back to college. What was your grade point average?
I got a distinction on both my degree and my dissertation

A model pop-up

Model Elettra Wiedemann, daughter of isabella Rosselini, speaks on her Fashion Week pop-up restaurant, Goodness.

What do you eat before a party, show or big event?
When you're modeling, your job is to take care of yourself. I've been modeling for almost 10 years now, so my "healthy eating" has just become the way that I eat. I usually stick to lean proteins and a nice, fresh salad.

What's your food vice?
I'm not so much a sweet-tooth person - I'm more of a salty person - so I need to stay away from things like potato chips and french fries - especially when mayonnaise is nearby.

Where do you like to eat in the city?
Seersucker in Brooklyn, and The Fat Radish down on the Lower East Side.

If you were to wine and dine someone, what would you make?
I'm usually pretty good at basic salmon fish with salad and maybe quinoa on the side with advocade. And I'm a big fan of Coconut Bliss ice cream.

What's your favorite dish that your mom makes?
My mom is a really amazing chef and she makes a very simple multigrain pasta. She has an herb garden and she chops up all different herbs and then mixes them together just with olive oil, salt and a little zest of lemon. It's very light and delicious.

The good food fight

Convenience is crucial when it comes to refueling during New York Fashion Week, and more often than not, models and editors make some very bad choices. Elettra Wiedemann, a model and a food activist, hopes to change that by opening GOODNESS, a pop-up restaurant installed at Ed's Chowder House across the street from Lincoln Center. From Sunday through Sep. 14, GOODNESS

will serve locally sourced food from some of the city's best toques, including Nick Wilbur from the Fat Radish and Christopher Rendell of "Iron Chef." Ms. Wiedemann has teamed with the Michelin star chef Ed Brown to design a soothing atmosphere in which to enjoy duck confit salad and pan-seared bream mash with a truffle vinaigrette
